Every Christmas Holiday season Costco carries a bunch of prime rib roasts in store at great prices. Be like us and skip the Christmas turkey or ham to have something really tasty. These prime cuts of beef come pre-seasoned and oiled, with whole garlic cloves throughout. As for the “Prime” designation, this is only given to less than 2 percent of all beef in the U.S. The signature of this meat is that it’s young and with the best marbling.

Prices start at $9.99/lb for the Choice Seasoned Prime Rib (bone-in) and $16.99 for Prime Seasoned Prime Rib (bone-in). If you can wait and are fast on your feet, you can buy these cuts after Christmas and New Years for about $3.99/lb. As you might imagine, they will often sell out within the first hour of being discounted.

We’ve enjoyed this on many occasions and found the meat to be of high quality. As garlic lovers, we find the seasoning and whole garlic cloves to be excellent. Another perk is that it’s all ready to put in the oven once it’s brought home from Costco, so it makes cooking the meal that much easier.

Need to complete the meal? Pair the prime roast with a hearty red wine, like a full-bodied cabernet sauvignon or petite sirah. Costco has increased their wine department over the last few years, so you’re bound to find a few excellent bottles in your price range.

    Yes! We bought the preseasoned choice last year (a 16 pounder) and it was phenomenal!! Had to go back this year – didn’t care that I spent $145!! Ok, I did, but it will be worth it… it is divine!! Great with creamed spinach 🙂

    I just called my Costco and the primerib is still $8.69/lb. When does it go to $3.99/lb?

      I am not exactly sure when the price will drop. It is up to each store individually and will also depend on how much is left over. Good luck, let us know if you hear of anything, I will do the same!

      Our traditional sides are mashed potatoes, Yorkshire pudding made in muffin pans and gravy (with drippings from the roast), and then something green: sauteed green beans or green bean casserole, asparagus, steamed brussel sprouts, what veggie side you like, and dessert, whatever you like, pie, cheesecake, etc. This makes for a really simple dinner, just add a really good beef rub and insert a digital oven thermometer and close the oven until the thermometer reaches the right temperature. Get the drippings for the Yorkshire Pudding and gravy and let the roast set for at least 10 minutes before cutting.

    Bought Costco’s prime rib-eye roast for the holidays. Horrible–dry, tough and tasteless. The worst piece of meat I’ve ever had. Perhaps it was water buffalo instead of beef.

    We have tried the prime rib roast more than once, and it was excellent. One of the meat dept guys recommended letting the roast age for a week covered in the fridge before cooking. Cook it slowly, and don’t overcook. Excellent !

    I have bought this for years and it’s delicious! I went yesterday to my local Costco and they only had 15 lb+ of the pre-seasoned prime rib so I bought an unseasoned 7.54lb prime rib. Can you tell me the seasonings to use?

      The Best seasoning is simple but great:
      Doust with Kikoman soy sauce
      Mix salt/onion powder/granulated garlic/White and Black pepper and rub liberaly since when sliced you only get a bit of the seasoning per serving.
      Lay onion peels-carrot peels and cut celery on bottom of flat roasting pan.
      Flash cook rib on 500% for 15 minutes and then
      l cook rib 2-1/2 Hrs @ 225Degrees and table 30 minutes for rare Prime rib roast.
